Our main objective is to propose to our customers level gastronomic services with a selection of products of the highest quality essentially representative of Andalusia. We present a series of experiences through our tastings of products from our land that will transport you to the realm of the five senses. All our services are backed by the support of the main companies related to both wine and gastronomy in our land. It is important to know that we have privileged scenarios where it is possible to carry out any of the tastings that we will present below such as Andalusian farmhouses, agricultural and livestock farms, emblematic wineries and stately palaces. However, we can also celebrate our tastings in hotel lounges, terraces and unique spaces. We are at your disposal to turn your event into an unforgettable moment. TASTING EVENTS
In our tasting of “generoso” wines from Andalusia, unique in the world, we will taste its varieties from finos and manzanillas through olorosos, amontillados, palo cortado and the unmistakable Pedro Ximenez. During the tasting our professional instructor will explain the differences between each wine, its ways of elaboration without forgetting its history. We will see the differences between the different DOs (Denominations of Origin) analysing among other details their main characteristics of elaboration and aging. In the presentation we can taste several types of “generoso” wines with the possibility of combining them with excellent local ham and cheese. A perfect pairing. We estimate the duration of the tasting at about 60 minutes approximately. TASTING OF “GENEROSOS” ANDALOUSIAN WINES
With the personality that Andalucia offers, Andalusian wines are known worldwide and recognised for their quality and character. The healthy rivalry between Spanish wines supported by their unconditional clientele increases the competitiveness between denominations throughout the Spanish territory. In our case we will stick to the different denominations of origin of Andalusia analysing their differences and their coincidences. We will analyse four wines recognised in their different DOs highlighting their characteristics of elaboration and aging depending on the soil, climatology, geographical areas and types of elaboration. Through a sensory analysis, we will offer the following wines: o Red Barbazul de Arcos de la Frontera (Cádiz) o Colonies with carbonic maceration (organic wine from Cazalla-Sevilla) o Tagus from Ronda Señorio de Nevada (Granada) ** the selection of these wines is subject to possible product changes We estimate the duration of the tasting at about 60 minutes approximately. TASTING OF ANDALOUSIAN WINES
Just as the professional ham cutter is trained in cutting, the “venenciador” is the professional who serves the “generoso” wines in an artistic, professional way and with an unmistakable style with his tool that always accompanies him as an extension of his arm: the Venencia. The “venencia” originates in the wineries where once the deal of the purchase and sale of the batches of wine was closed, it was toasted with a glass of wine that was extracted from the casks with a utensil called “venencia”. This way of serving wine in the glasses was born to seal commercial agreements (compromise) becoming part of social events and prestigious celebrations. Perfectly uniformed with their characteristic clothing, the “venenciador” "pulls" the wine from a certain height so that it oxygenates and when breaking in the “catavino” it is possible to extract all the flavour and smell of this privileged wine such as the wine of Jerez and the “manzanilla” of San Lucar. We can therefore include in our wine tasting the service of a “venenciador” who will not only serve us the wines in a masterful way but will also tell us the history of his art. If Spanish wines are recognised worldwide since the beginning of the history of humanity, Spanish olive oil enjoys, if possible, historically a greater recognition. Its quality, flavour and nobility are indisputable reasons why we have created the tasting of Andalusian olive oils. We will have on this occasion 3 types of olive oils served in three different types of glasses. The tasting will consist of savouring an olive oil from each glass that is presented covered, uncovering it to smell first and then taste its contents. In order to cleanse our palate between each sample, we will eat a piece of bread and drink a sip of water to dilute the flavour of the previous sample and proceed with the next one. Our professional instructor will tell us the main features, differences and elaboration of each olive oil without forgetting the history of our fabulous product. First our visual analysis and olfactory later, will take us the olive grove, to its roots, to those greenish extensions that mingle with the earth of orange and ochre colours that highlight the colour of its trees. We will analyse that soft liquid with the yolks of our fingertips that produces a feeling of well-being. As a final point we will taste olive oils that will leave us a swarm of acidic and sweet flavours, deep and green, tasty and complete that do not leave any palate indifferent. Probably the Spanish ham in all its versions is the most famous and recognised Spanish gastronomic solid product worldwide. To speak of ham is to speak of Andalusia by tradition as the cradle of the main types of ham in Spain. Ham, is already part of the Spain brand as one of its gastronomic engines and is the recognised jewel of our gastronomic culture. Its artisanal elaboration has remained intact until today perfected, if possible, with the same wisdom and art that guarantee the nobility of the product and its exclusive and unmistakable flavour. Exported to all corners of the world, it has become a faithful competitor of products as exclusive as Beluga caviar among others. In this tasting we will taste 3 types of ham accompanied by Spanish sherry wines and others that will harmonise perfectly with each type of ham. The 3 types of ham will be: o Jamón de Bellota 100% Ibérico (black label) o Jamón de Cebo de Campo ibérico (green label) o Jamón de Cebo ibérico (white label) During the tasting the professional instructor will explain the history of the ham, its origins as well as the different varieties of it. Finally it seems fair to recognise that whoever has tasted Spanish ham has acquired a lifetime experience that will undoubtedly want to repeat. The tasting of a ham tasting can only be surpassed by another ham tasting ... made by a professional ham cutter. This is the summum of the experience with our ham. The art of ham cutting turns a ham tasting into an unparalleled spectacle. The professional cutting of ham is an art that masterfully performed extols the aromas and flavours of the product. The professional ham cutter not only makes the cut of the product in a spectacular way but also plates its cuts in an artistic, creative and masterful way that invites you to taste this true delicacy. We will accompany our tasting with Sherry wines that will extol through the cut the aromas and flavours of the hams we are tasting. Some of our cutters are champions of Spain and others are listed among the best ham cutters. Hams from the denominations of origin Dehesa Extremadura, Huelva and Valle de los Pedroches will be offered and tasted, among others. Cheese is probably the second most appreciated gastronomic solid element of our gastronomy not only for its quality and variety but especially for its unmistakable personality of authentic flavours that denote an ancestral artisanal elaboration. Andalusia has an incredible cheese heritage, the result of a climate, soil and vegetation that infuse a unique and exclusive seal to its different denominations through our native cattle. We will savour in this tasting a selection of the best cheeses of Andalusia such as: Sheep semi-cured mixture Sheep cured sheep semi-cured Torremilano or grand reserve The success of the impeccable quality of our cheeses would not be possible if the way of elaboration and conservation process of yesteryear had not been maintained to this day.
